90/10 Challenge Weekly Dinner Menu – 9/24/12

Hey Everyone!

As I said in last week’s blog, as I go through the Middle Management Challenge Group with everyone in the challenge, my wife and I have decided to dedicate ourselves to planning our weekly dinner menu out on Sunday. That was one of the best things about the Ultimate Reset.  We are a little late this week…but better late than never.

So, with that, here is the menu for this week:

Monday

Trader Joe’s Chipotle Marinated Chicken Skewers, Brown Rice, and Steamed Broccoli

We did not get our menu planned out on Sunday this week so we had to make Monday’s dinner without going to the store.  It was no problem really because we had some frozen chicken skewers in the freezer.  The Chipotle chicken skewers have a few things in the ingredient list that are not in Tiers 1 and 2 but it is pretty minimal.  Overall, they will still meet the 90/10 principles.

If you don’t have a Trader Joe’s, you can simply skewer some chicken (1 inch chunks) and marinate in your favorite spices and then bake or grill.

We served the meal with brown rice and steamed broccoli tossed in olive oil and lemon juice.

Tuesday

ECTA Sandwiches and Fruit

It doesn’t get a whole lot easier than this folks.  ECTA stands for Egg, Cheese, Tomato, and Avocado.  Simply toast some whole wheat bread, cook the egg to your liking (could be over easy, sunny side up, scrambled, over hard, etc), and make a sandwich with cheese (go light), tomato slices, and avocado (sliced or mashed).  I will be seasoning with a little cholula hot sauce because it is a must.

We bought a nice canteloupe to go with it.

Tell me that is too hard even if you are busy…seriously…

Wednesday

Chili (Recipe HERE)

Gotta do a classic this week.  My chili recipe.  Not sure what we will serve this with if anything.  Maybe a veggie or maybe some homemade cornbread if we can find a 90/10 compliant recipe.

Thursday

 Greek Chicken and Barley Salad (recipe HERE)

A recipe from Cooking Light magazine.  Looks great to me!  This one will be new for us.

Friday

Fish Tacos (Recipe HERE)

This is another favorite of ours and we just had it a few weeks ago but we are going back for seconds and why not?  It is so good.  We will add black beans and my homemade guacamole (recipe HERE).

Saturday

Tortilla and Black Bean Pie (Recipe HERE)

Making extra guac to go with this one.  Mmmmm!

Lunch and Breakfast

My Breakfast every day will be vegan chocolate Shakeology made usually with coconut milk, flax seed, almond butter, water, and ice in a blender.

Lunches include leftovers from dinners, Peanut butter and honey on 100% whole wheat (often Dave’s Killer Bread), fruit and yogurt (plain yogurt), salads with homemade dressing, etc.
