90/10 Challenge Weekly Dinner Menu – 9/10/12

Hey Everyone!

As I said in last week’s blog, as I go through the Middle Management Challenge Group with everyone in the challenge, my wife and I have decided to dedicate ourselves to planning our weekly dinner menu out on Sunday. That was one of the best things about the Ultimate Reset.

So, with that, here is the menu for this week:

Monday

Fish Tacos and Black Beans (Recipe for Fish Tacos HERE)

These fish tacos are wonderful!  We haven’t had them for a couple of years but they used to be a regular on our menu.  The only thing you have to do is use whole wheat tortillas and it is compliant.

For the black beans, we will just use Trader Joe’s black beans and season with some chili powder, coriander, cumin, salt and maybe some Bragg’s Liquid Aminos.  Just simmer in a pan and serve.

Tuesday

Spaghetti and Turkey Meatballs (Recipe HERE)

Just use whole wheat pasta and breadcrumbs and you are good to go.  Enjoy!

We will be serving this with some steamed Kale (because we enjoy it and have a bunch right now).  The Lemon Pepper Kale is just made by steaming Kale and then tossing it with lemon juice, olive oil, and salt and pepper.

Wednesday

Bean Soup and Brown Rice

This is a simple one.  We are just making the 15 bean soup from a bag.  You can find a 15 bean soup bag in just about any grocery store.  Just follow the directions on the back except we are not adding the ham or bacon it recommends.  We will use vegetable broth and no meat.  We have done this before and it comes out fine.  We will serve it over brown rice.

UPDATE:  I just wanted to caution everyone to discard the “seasoning packet” that comes with these bags of beans.  It is a bunch of processed junk.  Don’t put it in your soup.  When we made this, we made it with the beans, vegetable broth, seasonings of our own (thyme, oregano, cayenne, chili powder, salt, pepper), a can of diced tomatoes, an onion, and some garlic.  It was great with brown rice.

Thursday

Penne, Egglplant and Tomato (recipe HERE)

Easy pasta dish.  We are going to grill the eggplant by cutting it into slices and laying on the grill with a little oil.  Use 100% whole wheat pasta.

We will serve again with kale since we have so much right now.  The Lemon Pepper Kale is just made by steaming Kale and then tossing it with lemon juice, olive oil, and salt and pepper.

Friday

Pork Tenderloin with Roasted Pears and Sweet Potatoes (recipe for Pears and Sweet Potatoes HERE)

The Pork is just a tenderloin from Trader Joe’s.  Directions are on the bag.  If you don’t have directions on the bag, here are some simple cooking instructions or you can throw it in your slow cooker.

I am interested to see how the pears and sweet potatoes taste.  We have never tried that recipe.

Saturday

Pesto Chicken Quinoa (recipe HERE)

Lunch and Breakfast

My Breakfast every day will be vegan chocolate Shakeology made usually with coconut milk, flax seed, almond butter, water, and ice in a blender.

Lunches include leftovers from dinners, Peanut butter and honey on 100% whole wheat (often Dave’s Killer Bread), fruit and yogurt (plain yogurt), salads with homemade dressing, etc.
