OK, so I joined Pinterest (all you guys can go ahead and begin the teasing and such…I am fine with it). This site is amazing for recipes. This entire menu is off of Pinterest recipes this week. It is only through Thursday because we are out of town all weekend for my Ironman in Arizona and won’t be able to cook for ourselves.

Burgers with Zucchini Tots (Recipe for Tots HERE)
Paula got some 93/7 lean ground beef on sale so we needed to do something with that. I figured some regular old beef hamburgers would be nice for a change. I will just grill them up and load them with our favorite 90/10 toppings on a 100% whole wheat bun or Dave’s Killer Bread.
The Zucchini Tots are a new recipe from Pinterest that I can’t wait to try!
BBQ Chicken Quinoa Salad (Recipe HERE)

Steak and Garlic Cauliflower Mash with Steamed Green Beans (Recipe for Cauliflower Mash HERE)
For the Steak, we are just going to grill some lean steaks.
The Cauliflower mash recipe is actually for potatoes but people in the comments section are using it with Cauliflower instead and having success so we will try it. Sounds like the trick is using a head of cauliflower, steaming it, and then drying it in paper towels to remove the water before mashing.
We will just steam some frozen green beans for another side.
Chicken Avocado Mac and Cheese (recipe HERE)
The avocado mach and cheese recipe sounds amazing. I am just simply cooking up some chicken and adding it to the mac and cheese (or on the side). I will probably grill or cook the chicken in a pan with olive oil.

Lunch and Breakfast
My Breakfast every day will be vegan chocolate Shakeology made usually with coconut milk, flax seed, almond butter, water, and ice in a blender.
Lunches include leftovers from dinners, Peanut butter and honey on 100% whole wheat (often Dave’s Killer Bread), fruit and yogurt (plain yogurt), salads with homemade dressing, etc.
